Rice, Sausage, and Mushroom Casserole

Okay, I made this one up and had no idea where I was going with it, but I’m pleased with how it turned out. I was making stuffed mushrooms, and wound up wth more mushrooms than I needed. And I also happened to have some left over bround rice and some Texas Style Garlic Sausages in the fridge. So — I gave it a try.

Ingredients
2-3 cups cooked brown rice
1-2 cups mushrooms, minced
1 cup bread crumbs
1 rib celery, minced
3 green onions, minced
1 red bell pepper, cleaned and diced
1 cup of broccoli, diced
1 T Worchestershire sause
1 tsp hot sauce (I like Crystal)
black pepper
garlic powder
1 lb smoked sausages (or other meat)
butter to top
Directions

Slice sausages and gook until slightly browned. Chop all the vegetables and combine with the bread crumbs and seasonings. Mix with rice. Add the sausages. Blend well in a shallow casserole. Top with pats of butter. Add a splash or two of beer or water. Cover and cook in microwave or in conventional oven until heated through (20-30 minutes @ 350).
