Wailted Kale and Spinach with Ham
1 bunch fresh spinach; stems removed; rinsed several times
1 bunch fresh kale; stems removed; well rinsed
3 cloves garlic, minced
1/4 pound shaved ham; diced
salt & pepper
2 T cotija or Parmesan cheese; grated
In large skillet heat oil for a minute or two over medium heat. Add ham and garlic; toss well. Add spinach and kale. Stir constantly to blend well. Cover and reduce heat. Allow to simmer for a couple of minutes; stir occasionally to evenly cook.
Serve up and garnish with a sprinkling of grated cheese.
