Seafood and Guacamole Enchiladas

I make up a seafood salad from mock crab meat. It’s great for sandwiches or in a tortilla wrap. I served Sherry a wrap, and she suggested I heat it up next time. So I decided to try this combination.

Ingredients

2 cups seafood salad
2 cups guacamole
colby-jack cheese, grated
flour tortillas
black olives, sliced (optional)

Directions

If you don’t have a seafood salad recipe, here’s a quick and easy one. Modify as you desire.  Same with the guacamole.

Warm a tortilla in the microwave for about 8 seconds (to soften); or heat for a minute or two in a dry skillet. Place a couple of tablespoons seafood salad on the tortilla; top with an equal amount of guacamole; then add about the same amount of grated cheese. Place in an oven safe (or microwave safe) baking dish.

Repeat as often as you like or until baking dish is full. Spread some guacamole over each roll-up and push some into the ends if possible. Top with more grated cheese and with black olives if desired.

Cover and warm in 350 oven (about 15-20 minutes) or in microwave until heated through and cheese is bubbly.

Serve with a dollop of sour cream if desired.
