Stuffed Mushrooms

I make up stuffed mushrooms from time to time and really don’t have a set recipe for them. But usually it is something like this. This time, I did these in the Nuwave Oven. No, I’m not selling Nuwave Ovens, but I do find mine to be useful.

After 10 minutes in the Nuwave

Ingredients

1 lb white mushrooms
bread crumbs
parsley; chopped
Cotija cheese
Worschestershire Sauce
1 or 2 egg; beaten
onion powder
garlic powder
cayenne pepper
Sesame oil

Directions

Remove stems from mushrooms; then carefully scoop out the centers, being careful not to cut through the cap. I use a small paring knife, and just work round and round taking out a bit at a time, until it’s hollowed out enough to stuff.

Chop stems finely and combine with the bread crumbs and parsley. Stir in the eggs. Mix in some onion, garlic, and cayenne powder to taste. Add some sesame oil and some Worchestershire Sauce. Stir in a handful of Cotija cheese. Mix well.

Stuff each cap with a heaping spoon of the mixture creating  a small mound on each one. Drizzle with a bit more Sesame oil, and Worchestershire. Place in oven at 350 until browned (about 15 minutes). In our Nuwave, it took about 10 minutes.

Allow to cool for a couple of minutes before serving.
