While watching the Hungry Girl show on the Cooking Channel. I started to type out the instructions when she posted her web address. Duh!
1/4 cup apricot preserves (low sugar)
2 T brown sugar
1 1/2 T butter (lite spread)
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 t nutmeg
2 lb baby carrots
1 onion; sliced
1 red and 1 yellow bell pepper; sliced
Mix in a slow cooker; cook on high for 3-4 hours or low for 7-8 hours.
