Mushrooms in Garlic Butter

I stumbled across the delightful Smitten Kitchen cooking blog quite by mistake. I still don’t know where I found the link, but I’m glad I did. I adapted the following recipe from Deb Perelmans Garlic Butter Roasted Mushrooms Visit her site and enjoy. She’s doing a fantastic job there!

Ingredients

1 lb small mushrooms (cut the larger ones in half)
3-5 cloves of garlic, finely minced
3 T olive oil
3 T butter cut into pieces
1/4 cup cilantro; chopped
juice of 1/2 – 1 lemon
black pepper
cooking spray

Directions

Preheat oven to 450F. Spray a shallow baking dish with the cooking spray. Add the mushrooms and garlic to the pan. Drizzle with the olive oil; then add ground black pepper. Toss well; then top with the pieces of butter. Place in center oven rack and roast for 15 – 20 minutes stirring every five minutes or so. When garlic is tender, and butter is bubbling, remove from oven. Toss with the cilantro and lemon juice.

This makes an excellent topping for home-made pizza.
