Swiss Cream of Potato Soup

Wally’s wife, Lin (RIP), gave Sherry a copy of Good Housekeeping Cookbook (Harcourt,
Brace & World, Inc., New York, 1963) when we married in 1971. This recipe has always been one of Sherry’s favorites. It’s pretty good; if I do say so myself.

Ingredients

4 medium potatoes
1/2 pound bacon, diced
1 onion, chopped
2 T butter
2 tsp salt
1/2 tsp nutmeg
dash Cayenne
1/4 tsp Worcestershire sauce
3 cups milk
1/2 – 1 cup shredded Swiss cheese

Directions

Cook potatoes until tender. Meanwhile cook onion and bacon on low until bacon is lightly browned. Drain the potatoes and mash. Combine all ingredients except cheese. Stir frequently over low heat. Sprinkle with cheese and serve immediately.
