Shrimp and Guacamole Panini

I’ve been having fun with this Nuwave Oven we recently put in to service. I’ve found it’s quick and easy to cook up some shrimp for a snack or sandwich.

Ingredients

8 small to medium shrimp; peeled and deveined

1 small to medium avocado

1/2 Roma tomato (or a small part of any other tomato); chopped fine

1/2 shallot; peeled and chopped fine

1 or two cloves of garlic; minced

2 T or so of mayonnaise

shot of hot sauce, or a sprinkle of cayenne

4 slices of French Bread

garlic powder

paprika

cayenne

slices of smoked gouda or other favorite cheese

Directions

Sprinkle shrimp with garlic powder, paprika, and cayenne. Mix well and set aside.

Preheat Foreman Cooker; combine flesh of the avocado with the chopped tomato, garlic, and shallot; add mayo and stir till well blended.

Spread a bit of the guacamole on one side of each slice of bread.

Place shrimp on top rack of Nuwave, and cook for 2 minutes; turn and cook another 2 minutes. If not quite done, cook another 30 seconds or so.

Place 3-4 shrimp on one slice of bread; top with cheese; cover with another slice of bread. Press in Foreman cooker or other panini style cooker for a few minutes.

Remove when golden brown, and repeat with the other sandwich. If desired garnish with a slice of dill pickle.
