Flounder Baked in Mushroom Sauce

A good way to do flounder. Very flavorful; I just dreamed this up on the spot, and we were both very pleased with how it turned out.

Ingredients

1 lb flounder filets
Old Bay Seasoning
8 oz fresh mushrooms; chopped
1 onion; chopped
4 cloves garlic; minced
1 stick celery; chopped
8 ounces fresh mushrooms; chopped
1/2 cup white wine
2 T butter
1 T olive oil
cayenne pepper
black pepper
thyme 1/2 – 1 teaspoon; dried
6 oz can chopped shrimp
6.5 oz can chopped clams in clam juice

Directions

Preheat oven to 375 F. Arrange fish in baking pan, and sprinkle with Old Bay. Chop onion, and saute in large skillet in butter and oil. After a couple of minutes, add the garlic and celery. When softened a bit, add the mushrooms and remaining seasonings to taste. Add wine. When all the vegetables are soft, add shrimp and undrained clams. Stir to blend. Sprinkle all with a bit of Cachere’s Gravy Mix stirring constantly.

Pour sauce over filets and spread evenly. Bake uncovered 8 – 12 minutes.
