Drum Fish

I love to shop at our Fiesta Mart near Reliant Stadium. The Seafood Department lady has taken a liking to me, and that suits me just fine. The seafood lady at Kroger in Memphis seemed to like me too. I’m not complaining.

Yesterday, Blanca recommended the drum. She said it was fresh; it was still in the tubs on ice behind the counter and hadn’t even been taken out to put on display yet. It was that fresh. She said it was a “superb” fish.

She added, “Trust me on this, amigo.”  That’s that — when Blanca says, “Trust me,” I go with my gut feeling and take her advice. She’s never let me down.

She trimmed the big fish down to two HUGE filets. I put one on ice for tomorrow, and prepared the other as follows.

Sprayed the fish with olive oil; then sprinkled with garlic powder and Old Bay seasoning on the flesh side. I did nothing to the skin side.

Then, I placed it flesh side down in the Nuwave on the 4″ high grid and cooked for 10 minutes; turning half-way through.

Removed to a cutting board; drizzled with lemon juice, and then served it up in two halves for me and Sherry; along with some lightly fried plantains.

Hoo-boy!  We repeat this tomorrow!
