Coconut Shrimp

We tried these tonight, and got rave reviews including from Chef Joel St. John.

Ingredients

1 lb. raw shrimp; peeled and deveined
3 T flour
1 T cornstarch
1 tsp. salt
1 T garlic powder
1 egg
1 beer
1 T Ranch Dressing Powder
grated coconut
1/4 cup corn or peanut oil

Directions

Combine flour, salt, cornstarch, Ranch powder and garlic powder. Add egg. Pour in beer and stir to blend. Probably will only need half of a can of beer, but use as much as necessary.

Dip shrimp in beer batter; then roll in coconut. Fry in oil and drain on paper towels. Watch carefully, as the coconut tends to blacken quickly.
