Smothered Cornish Hens

Ingredients

10 cloves garlic, finely minced
2 Cornish hens
olive oil
salt and pepper

Directions

Stuff garlic under skins of hens. Truss the hens and place in baking pan breast side up. Pre-heat oven to 375. Allow hens to come to room temperature.

Combine peppers and unions; add a few cloves of finely minced garlic; some salt and paprika. Cover bottom of baking pan with the onion/pepper mixture. Top with hens. Add two cups of chicken broth to pan.

30-35 minutes begin checking temperature. Cook to 160 or so.
