Souvlakia – Marinated Pork, Peppers and Onions
We used to do this a lot when we lived in Arkansas. For some reason, I think maybe I’ve not done this in the 12 years since we moved to Houston. Today, that changes.
Ingredients
1.5 pounds pork stew meat; cut into 1″ cubes
1 yellow onion, peels and cut into 1″ square pieces
2 green peppers; cleaned and cut into 1″ square pieces
3 T olive oil
1 T lemon juice
1/2 T soy sauce
1/2 teaspoon oregano
black pepper to taste
Directions
Combine all ingredients in a mixing bowl and allow to marinate for a couple of hours. Put meat and veggies on skewers and either broil or grill until done. Serve with pita bread or with flower tortillas. Have fun.
Special Note – November 24, 2014 – Tonight I tried a bit of a different approach. (Just the meat; I didn’t cook any veggies with it this time,)
I made up a marinade pretty much like the one above – except I added black pepper and garlic powder. A dash or two of Crystal Hot Sauce, some habanero sauce, and some liquid smoke. I then threaded them tightly compacted on skewers (cut into 1/2″ to 3/4″ bites); and ran on the 4″ grill on the Nuwave for 6 minutes; flipped and ran another 8. Darned near perfect. Very good!
