Roasted Cherries with Balsamic Vinegar

A friend of ours from church, Molly Quigley, shared this recipe she got from Serious Eats

Ingredients

1/2 pound fresh cherries
1 baguette of French Bread
1 T balsamic vinegar
1 T canola or olive oil
Goat Cheese for topping

Directions

Set oven on 350°F. On a baking sheet drizzle baguette slices with olive oil. Toast until lightly browned – about 8 minutes or so. Allow to cool.

Turn oven to 400°F. In an oven-proof pan, toss the cherries with oil and vinegar. Season to taste with salt and pepper. Place in oven uncovered, and roast for about 40 minutes, tossing now and then. Roast until cherries are tender. Allow to cool. Slice each cherry in half, and remove pits.

Spread a toasted baguette slice with a bit of the goat cheese and a few cherry halves. Top with a spoonful of the roasting juices. Serve immediately.
