Spinach with Cheese and Boiled Egg
I made this up tonight just on a lark. I’ll do this one again!
8 oz. Baby spinach
2 T olive oil
Salt and pepper
2 cloves garlic, minced
1/2 to 1 cup grated cheddar cheese
1 boiled egg; shelled and coarsely chopped (or sliced)
Sriracha sauce (optional)
In hot oil using a large skillet, wilt spinach. After a few minutes, season with salt and pepper. Toward the end, add the garlic. Continue tossing until fully wilted. Transfer into a wide serving bowl. Top with grated cheddar cheese. Heat in microwave until cheese is melted. Add Sriracha sauce if desired and stir in the egg. Serve immediately.
