Sweet Potato Tots
You can make these ahead of time (before baking). Place frozen tots in oven and bake until done.

1 3/4 cup mashed sweet potatoes (3 medium sweet potatoes)
1 egg yolk
1/2 cup grated cheese
1 small brown onion finely grated
1 garlic glove crushed
1 cup breadcrumbs
1/4 cup fresh cilantro
1/2 teaspoon salt (optional)
Preheat oven to 375 F. Place potatoes on a baking tray. Poke holes in potatoes to allow steam to escape. Bake 30 minutes or longer until easily pierced with a knife or skewer.
Allow to stand a few minutes until cool enough to handle. Cut potatoes in half lengthwise; then spoon out the flesh. Place into a large mixing bowl; then allow to reach room temperature.
Add egg yolk, grated cheese, onion, garlic, breadcrumbs, salt, and herbs. Combine until blended.
Shape into small potato-tot size balls; then place on a baking sheet covered with parchment paper. Leave room between each tot
Bake at 375 for 20 – 30 minutes or until crisp and slightly browned. The centers will remain moist.
