Cauliflower Snack Chips
2 c. riced cauliflower
1 1/2 c. grated Parmesan
Freshly ground black pepper
Preheat oven to 375°. Line a baking sheet with parchment paper. Apply cooking spray lightly.
Microwave the cauliflower in covered bowl on high for 1 minute. Stir and microwave another minute. Wrap in a kitchen towel and squeeze out the water.
Return cauliflower to bowl and stir in the Parmesan and ground pepper.
Spoon cauliflower mixture on to the baking sheet, forming into small patties. Leave a bit of space between them.
Bake for 12 minutes or until the edges begin to turn golden brown. Allow to cool for a few minutes before serving.
