Italian Sausage Meat Loaf

Meat loaf is hard to beat; and the leftovers are even better!   I pressed this one into a sheet pan, and it was superb!

1 lb breakfast sausage
1 lb mild Italian sausage
2 eggs
Oatmeal (a handful or so)
Allspice (Slight sprinkling)
Garlic powder
1 onion
1 medium tomato
Bottled BBQ sauce
Prepared mustard

Preheat oven to 400F. Dice onion and tomato; cook in a bit of oil until slightly softened. Allow to stand until cool enough to handle. Then proceed to next step.

In large bowl combine all ingredients except BBQ sauce and prepared mustard. Place a sheet of foil down in a 10” x 13” rimmed baking sheet. Press meat loaf mixture into pan and smooth out evenly. Place in oven for about 30 minutes or so.

Meanwhile mix together a 1/2 cup of bottled BBQ sauce and a few tablespoons of mustard.

When meatloaf has reached 160F, spread glaze evenly on top; then place under broiler for about 4 minutes; or until it starts to caramelize a bit.

Allow to stand 5 minutes before cutting.

If you prefer to do this in a traditional loaf pan, allow more cooking time. You may have to skip running under the broiler.
