Home-made Breakfast Sausage
We’re trying to come up with an alternative to high-sodium breakfast sausage; and we figure the best way to get that is to make it from scratch. So, W started with Alton Brown’s recipe. I cut his salt from 2 teaspoons to 1, which cut the Sodium from 14% to 8%! Great!
Then, I went to Very Well Fit Nutrition Calculator. I pasted in the recipe ingredients from Brown’s recipe; then tweaked the salt down to 1 teaspoon. The generator then produces a code which can be imbeded into online recipes. It looks like the Nutrition Label at the bottom. Very cool.
1 pound ground pork
1/2 teaspoons kosher salt
3/4 teaspoons freshly ground black pepper
1 teaspoons finely chopped fresh sage leaves
1 teaspoons finely chopped fresh thyme leaves
1/4 teaspoon finely chopped fresh rosemary leaves
1/2 tablespoon light brown sugar
1/4 teaspoon fresh grated nutmeg
1/4 teaspoon cayenne pepper
