These are so simple and so much superior to the store-bought mixes. You owe it to your family to make pancakes from scratch.
3/4 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
2 tablespoons sugar
1 cup milk
1 teaspoon vanilla extract
Combine dry ingredients in a mixing bowl. Beat egg and combine with vanilla and milk. Quickly stir into the flour mixture. Don’t worry about the lumps. Just break up the biggest ones.
Heat non-stick pan over medium high heat. Place a few drops of peanut oil in pan and swirl to spread. Pour into the skillet enough batter to make about a 4-5 inch pancake. Watch for tiny bubble holes to form on top. This is a sign the first side is done. Check for doneness and flip when ready.
