Fool-Proof Steamed Eggs

Special thanks to America’s Test Kitchen for this take on steaming eggs to a hard-boil.

Bring one inch water to a rolling boil in a pot suitable for steaming. Place eggs in steamer basket and the basket into the pot so that the eggs are not touching the water. Cover and steam at medium low for 13 minutes (hard); remove eggs and immerse in an ice bath (equal parts ice and water); in a container that can hold all the eggs in one layer AND has a lid.

After 15 minutes in the bath, close the lid tightly. Then shake the container vigorously. Watch the video to see how it’s done. Then begin peeling; it’s easy!
