We do up something we call “Huevos Rancheros,” but it’s nothing like the dish you’re familiar with. Ours is more like a chili-based casserole. Lots of cheese, tortillas torn into pieces; with several eggs added whole and allowed to sort of poach in the casserole.
Usually, we use turkey or pork in our chili, but tonight we used a big bag of fresh spinach. And it turned out pretty darned good!
