Jalapeno Poppers

I did these for the first time for a gathering over at our neighbors’ house. I got the idea from my son and his friend, JR. This is really simple. Just keep an eye on them and try to bring the bacon to crispy without over doing the cheese. Once the cheese started to brown, I pulled these out of the oven.

These were in the oven about 25 minutes.

Ingredients

10 jalapenos
Mexican melting cheese
sliced bacon

Directions

Cut the jalapenos in half lengthwise and clean out seeds and membranes. Cut cheese into small bits and fill the jalapenos completely. Cut bacon slices in half and wrap around the cheese-filled jalapeno.

Place on rack and put in oven at 400-450. Watch them carefully, and cook until bacon begins to crisp up a bit. Remove from oven when either the bacon is crisped up or the cheese begins to brown.

Cool, and serve.
