Green Beans, Potatoes, and Sausage Casserole
12 oz pack of frozen cut green beans
1 lb smoked pork sausage (Kielbasa, etc.); sliced
1 medium onion, peeled and diced
3 medium potatoes, diced
1/2 cup Parmesan or other similar cheese (I like Cotijo.), grated
1/2 cup sliced almonds
Add a bit of water to a medium sauce pan. Season with a dash of Worchestershire Sauce, a and a sprinkle of black pepper and salt. Begin simmering potatoes and onions with the pot covered.
While the veggies are still firm, add the sliced sausage. Top with a handful or two of the beans. (Or all of them if they’ll fit.). Continue cooking gently until the potatoes are tender, the sausages are heated through, and the beans are beginning to turn tender.
Drain well. Place a layer of the veggie/sausage mixture in a pie pan. Top with a layer of grated cheese. Add another layer of veggie/sausage; top with more cheese and a handful of almonds.
Bake at 350 until the cheese is bubbly or begins to brown. Allow to stand a few minutes; then serve.
