Banana Oat Energy Bites
Sherry grabbed this off Facebook or somewhere, and sent it along. Easy and delicious!
2 ripe bananas
2 cups rolled oatmeal
¼ cup almond butter (or peanut butter, or your favorite nut butter)
¼ cup honey
2 tablespoons mini chocolate chips
½ teaspoon cinnamon
Mash up the bananas in a large mixing bowl. Stir in the oats, almond butter, honey, chocolate chips and cinnamon.
Spoon out around 2 tablespoons at a time and roll into a 1-inch balls. Repeat with the rest of the mixture.
Refrigerate for 2 hours, so the oats can absorb the moisture from the bananas. Store in the refrigerator.
