Sherry loves her vegetables, and I love cooking them for her. I had one of those big bags of prewashed spinach; a bunch of asparagus, and some mushrooms.

I was baking some banana bread anyway, so I popped my spinach into the wok; tossed it with some olive oil, salt and pepper; then heated uncovered in the 350F oven.

It was ready probably in 10-15 minutes.
