I got this recipe off a bag of small potatoes (Mountain King Petites).
8 petite potatoes, unpeeled
1/2 cup sour cream
1/4 cup picante sauce
3 Tsp bacon bits
6 chopped green onions
1/4 cup shredded cheese
Wash potatoes and prick with fork. Microwave until tender. Mountain King suggests 9 minutes.
Remove and cut in half length wise. Scoop out most of the flesh leaving about 1/4″ of flesh layer next to the skin. Fill the skins with the rest of the ingredients.
Microwave for an additional 30 seconds or so to melt the cheese.
