Beets and Potatoes

I picked up a couple of “commercial grade” sheet pans (1/2 sheet) at Walmart for just under $7 each the other day; and I’ve begun using them for supper.

Tonight, I peeled and diced a couple of beets; tossed them with olive oil; seasoned with salt and pepper and  roasted at 400F for 30-40 minutes.

In a second pan,I did the same thing with potatoes cut into  1″ wedges.

These made for a superb supper along with a pot of Lima beans from scratch and some pan cooked mushrooms. Ymmmmm.
