Easy Turkey Meatloaf

2 lbs ground turkey (dark)
2 eggs
1 small onion (chopped)
2 cloves of garlic (minced)
small can of tomato paste (use only 3 tsps; reserve the rest.)
cayenne (a few dashes)
1/2 cup bread crumbs


Reserved tomato paste
Onion (chopped)
1 clove garlic (minced)
1 red bell pepper
1 cup water
salt & pepper


Add meat, onion, garlic, tomato paste, cayenne, salt, egg, and bread crumbs to a large bowl and mix by hand. Form into loaf and place in backing pan.

Place sauce ingredients in blender and process until smooth. Pour over the top of the meat loaf; cover pan with foil. Bake at 350 for 45 minutes; remove foil and continue baking another 45 minutes.
