Apple Puff Pancake
I got this recipe from a tub of Land O Lakes Butter.
Ingredients
4 T butter
1/2 cup milk
2 eggs
1/4 cup maple-flavored syrup
1 meium apple, peeled, quartered, and sliced (about 1 cup)
2 T firmly packed brown sugar
1/4 tsp ground cinnamon
powdered sugar
Directions
Prehead oven to 425F. In a 9″ baking dish, melt 2 T of the butter in the oven. Spread over bottom of dish. (3-4 minutes)
Combine flour, milk, and eggs; whisk until well blended. Pour this batter into the buttered baking dish and return the dish to the oven. Bake about 15 minutes or until puffed up a bit and turned lightly golden.
In another pan, melt the other 2 T butter. Add the maple syrup, apple slices, brown sugar, and cinnamon. Cook to tenderize apple – about 4-5 minutes.
Spoon the apple mixture over the pancake; sprinkle with the powdered sugar. Serves 2.
