We picked up this wild-caught cod at Krogers, and gave it a try. We both were delighted with the way it turned out. We’re going to try this with a freezer pack soon.

 
Ingredients

2 Cod filets, 1-inch thick

Butter

Old Bay Seasoning

Vinegar (We used red wing vinegar)

Garlic powder

Salt & pepper

Directions
Heat olive oil in pan over medium high heat.
  1. Pat filets dry.
  2. Season both sides of fish with salt, pepper, garlic powder, and Old Bay.
  3. Heat oil in pan over medium-high heat. Add butter. When the butter begins to froth add fish to pan.
  4. Cook first side 3 minutes.
  5. Add a generous pat of butter and a splash of vinegar. Spoon juices over fish.
  6. Check for flakiness and remove if done. If not continue carefully.
  7. Allow to rest 2-3 minutes.
