Okay, not sure my chef friend from Louisiana will agree with what I did here, but it turned out pretty darned good. Sherry wanted something quick, and we didn’t have a lot to work with. But we DID have some pretty tasty pico de gallo style smoked sausage and some brown rice.
Throw in some yellow bell pepper, onions, garlic, and some sofrito from a jar, and it was very tasty. I’ll do this again!
